Mince 1 kg
Basmati rice ½ kg
Onion 2 (sliced)
Dry plums ½ cup
Coriander powder 1 tsp
Cumin powder 1 tsp
All spice powder powder 1 tbsp
Black cumin seed ½ tbsp
Bay leaves 2
Red chili powder 2 tbsp
Cloves 2 tbsp
Green cardamoms 2 tbsp
Cinnamon sticks 2 tbsp
Tomatoes 5 – 6 (sliced)
Ginger garlic paste 2 tbsp
Fresh chilies 5 – 6
Fresh coriander ½ bunch (chopped)
Fresh mint ½ bunch (chopped)
Clarified butter or oil ½ cup
Yellow food color 1/2 tsp (mixed in 2 tbsp milk)
Salt to taste
Boil rice with salt and black cumin, cook till half done.
Heat oil in a pan, and sauté onions in it to golden brown color.
Add in cloves, cinnamon, cardamom, and bay leaf in it.
Mix well and add garlic ginger paste, followed by mince and sauté.
Add cumin powder, all spice powder, coriander powder, red chili powder, tomatoes and plums and allow cooking it on low flame.
Put the cooked mince in a large pan and top it with green chillies and chopped coriander and mint.
Spread rice over it, drizzle food color on top and cover tightly.
Cook it on very low heat for 15 minutes.
Mince biryani is ready. Serve hot with mint raita.
